On the green highland-plains of central Switzerland VIVE Group’s STEMA is naturally raising and selecting with utmost care first class Swiss-gourmet-beef quality under a registered and protected classification standard : SwissPrim Gourmet. Only beef which meets the highest demands may carry the certified SwissPrim Gourmet label. STEMA believes that great tasting beef is a process that starts at birth and ends at the plate. Many quality-conscious and devoted people who do not only care about good-keeping the animals but also breeding, feeding and highly developed sanitary aspects are involved with all their heart-blood into the outstanding A-grade meat producing process. SwissPrim is only produced from special-selected breeds from strictly controlled Swiss mountain breeding-farms. After 12 to 16 months of natural protein-rich nourishing our cattle has gained a weight of approximately 600 kg and the fattening has reached its peak. At this stage the succulent intramuscular fat share shows a fine marbeled structure in the aromatic and tender meat. Subsequently to slaughter the meat aging-process commences through natural phosphate decomposition and enzymatic lactic-acid production which cumulates in a succulent tenderness of our Black Angus meat. As longer lasting the meat aging process as more aromatic and tender our meat appears. All cattle are sourced back to the breeding farm by using ear badges on each animal. The numbers on these ear badges can be traced and deliver information about each individual animal from its birthday, up-bringing, feeding, transport and slaughter even to each single cut of its meat.
